Yellow Curry Recipe {Real Food}

So awhile ago I mentioned my famous chicken curry.  Thought I’d share the recipe for folks that have had a resurgence of cold weather the last few weeks.  A nice, spicy soup always warms up my soul.

Yellow Chicken Curry

Serves 6-8

  • 1-2 lbs of chicken breast
  • 1 T coconut oil
  • 2-3 medium potatoes, diced into 1 inch cubes
  • 6-8 medium carrots, sliced into slabs
  • 1/3 C onion, diced
  • 3-4 cloves garlic, minced
  • 1 lime, juiced
  • 2 T fresh grated ginger
  • 1 lb frozen peas
  • 1 jalapeño, minced
  • 1- 1.5 C cilantro, chopped
  • 16 oz chicken broth
  • 2 cans coconut milk (the full fat kind tastes best)
  • curry powder
  • salt (if you’re going for low sodium, you could try coconut aminos instead)
  • pepper

Carrots & peas are the traditional veggies for yellow curry, but really you can add anything you have on hand.  I love bamboo shoots in mine, but couldn’t find any at the Winn Dixie (Trader Joe’s, how I miss you…).   Just add green beans, snow peas,  kale, cabbage, cauliflower, etc.  Whatever sounds good.  :o)  It’s also tasty with a handful of fresh Thai Basil thrown in but, alas, Winn Dixie was lacking there as well.


Brown chicken in coconut oil with salt, pepper and 2 T curry powder. Once chicken is thoroughly cooked, add onions, garlic, jalapeño & ginger.  Cook until onions are translucent.


Add coconut milk, chicken broth, & lime juice. Spice to taste with salt, pepper & curry.  I usually use about half a bottle of curry powder- so about 5-6 Tablespoons.   Add potatoes and carrots.  Cook until they are soft. Add frozen peas and cook another 5 minutes or so.  Remove from heat and stir in cilantro.

Serve over jasmine rice and garnish with a sprig of cilantro.

If you like things on the spicier side, add a teaspoon or two of sambal bajak.  The curry isn’t too spicy, though it mostly depends on the potency of the jalapeño, which you can’t really control.

Paleo Option:  Omit the potatoes and serve over Primal Palate’s amazing cauliflower rice.  This is how we eat it and it’s amazing!

Vegan Option:  Omit the chicken and chicken broth- replace with vegetable broth.

As with all {Real Food} recipes, try to buy organic- we love supporting local farmers’ markets.  In my research, I’m finding that (no duh…) no one way of eating fits everyone but everyone does benefit from eliminating processed food.  Whether you’re vegan or protein-packed paleo, focus on eating food straight from the source.  If you can’t get it straight from the source (like the coconut milk), research and find the least processed option.


I stopped eating Real Food while on my trip to California and the road trip across the country, but have started focusing on eating well this last week.  I went from sluggish, tired and hurting to energetic (I’ve exercised 5/7 days this week and awakened before my alarm clock son most mornings) and pain free- except for the sore muscles from pounding out burpees every night.
